Italian Stuffed Peppers
5-ounce bag Marzetti® Garlic Butter Crouton Bread
4 green and/or red bell peppers
1 tablespoon oil
1 medium onion, finely diced
3 cloves of garlic, minced
1 pound ground beef or Italian sausage
Salt and pepper
2 large eggs
1/3 cup parsley, chopped
3 tablespoons Parmesan, shredded
Red pepper flakes to taste
14-ounce jar marinara sauce
Step 1: Preheat oven to 350°F. Place croutons in a food processor and grind until you have 1 cup fine bread crumbs.
Step 2: Cut off tops of peppers. Remove seeds and ribs.
Step 3: Heat oil in a large skillet over medium-high heat. Add onions and sauté until soft and translucent, about 5 minutes.
Step 4: Add garlic and sauté another minute. Add ground beef or sausage, breaking up with a wooden spoon. Season with salt and pepper. Continue to cook until no longer pink. Set aside to cool.
Step 5: Stir together bread crumbs, meat, eggs, parsley, Parmesan, and red pepper flakes in a mixing bowl. Taste and season with salt and pepper as needed.
Step 6: Stuff peppers with the meat filling.
Step 7: Pour a layer of sauce into 8- to 9-inch casserole dish. Add stuffed peppers. Pour a little sauce over each pepper and place their tops on.
Step 8: Bake until peppers are tender, about 1 hour. Serve hot with sauce spooned on top of peppers and grated Parmesan.
